I love food with coconut milk. Curries, baked goods, ice cream, bean dishes, etc. So good. So creamy. When I go through a cookbook, if I see coconut milk in the list of ingredients, you can bet that I'll dog ear that page.
One such book is A Year in a Vegetarian Kitchen by Jack Bishop. Even though I'm vegan, I still buy some cookbooks that are vegetarian if something about the book grabs me. Jack Bishop's books "grab" me. I have his Italian cookbook too. Sometimes I have to add a bit more spice to the dish to suit my liking but I like the combinations in the recipes.
The recipe used for the picture above had cauliflower, spinach, curry powder, garlic, coconut milk and pasta. I don't know the name (I'm at work and can't reference the book). I think I could eat the dish without the pasta. It is so creamy and filling all on it's own, which is fits me fine since I'm trying to cut down on my gluten intake. Cut down, not avoid completely.
Next time you are at the library, look up Jack Bishop's books and browse through it. Hopefully you'll find some gems, like I did.
