The muffins are moist, have just the perfect amount of sweetness and are going fast in my house! This is my second batch in two days. And I bet I'll make them again before the weekend is over. Come on by before we eat them all and I might just give you a taste.
Yesterday was packed full of good food but unfortunately NO photos. For shame for shame.
But I'll go ahead and tell you about the goodness.
Friends came down from the Bay Area and we decided to stay in and eat instead of going out and waiting in long lines at any given restaurant. So I stayed up late and Saturday and made a double batch of Pumpkin Waffles from Vegan With A Vengeance. The smell in the house was incredible. I packed them away and went to bed. In the morning I got the potatoes and herbs into the oven for Herb Roasted Potatoes from VWAV. Those had be baking for a good 50 or so minutes, gave me plenty of time to make the Sun dried tomato and Asparagus Fritatta. Another gem from Isa Chandra Moskowitz. Make sure to have enough for leftovers. This stuff is great the next day for lunch! One of my friends brought fresh berries and apricots to share. The buffet was perfect.
My 17 month old couldn't eat enough of the roasted potatoes, my son ate his weight in waffles, and I had to stop myself from eating all of the frittata.
Later, during naptime for the toddler, I was able to get back into the kitchen and make something from the new Babycakes cookbook by Erin McKenna. I decided on the Rasberry Scones since I still had some berries leftover from brunch. Spelt flour, coconut oil, agave, vanilla extract, some baking soda and hot water along with some fresh berries and you have some delicious scones. Not heavy, not too sweet, not dry or "puck" like. Absolutely perfect! The family ate all but two before dinnertime. I managed to bring two scones to work to share with coworkers. They were a hit. Next I'm going to try and make the Apple Cinnamon Toastie. Looks like a cross between a cake and bread. With just enough sweetness and perfect with a cup of tea.
I'm going to go heat up a pumpkin waffle and have a late breakfast. Next time I'll remember to take some photos before I dive in.
